CAPSICUM SAUTE FRY

THIS IS AN UNUSUAL VEGETABLE FRY, UNLIKE THE OTHER VEGETABLE FRIES.
Ingredients
  Diced capsicum 1
  Grated coconut 1⁄2 Cup (8 tbs)
  Red chili 4
  Coriander seeds 2 Teaspoon
  Urad dal 3 Teaspoon
  Mustard 1 Teaspoon
  Oil 3 Teaspoon
  Salt To Taste
Directions

1. ROAST COCONUT, RED CHILLIE, CORIANDER SEEDS, URAD DAL IN 1TSP OIL AND POWDER IT.
2. IN A PAN HEAT 2 TSP OIL PUT MUSTARD ONCE IT CRACKLES ADD CAPSICUM AND SAUTE WELL
3. SPRINKLE SOME SALT AND JUS A LITTLE WATER TO COOK IT (NOT TOO MUCH WATER)
4. CLOSE IT WIT LID FOR 3-4 MINS
5. THEN ADD THE GROUND POWDER MIX AND SAUTE IT WELL TILL THE POWDERED MIXTURE GETS COATED ON THE CAPSICUM.
6. SERVE WITH PLAIN RICE OR SIDE DISH FOR RICE & CURRY

Hey! Yummy! I tried it. It turned out Really yummy. My roommates loved it too. It was just delicious. I tried it twice... the second time without making coconut mixture into a powder! It turned out good that way too. Thanks for the recipe

Are the "capsicum" green bell peppers? If so bet it would be fun to use red, yellow,purple non-green ones. Shanti/Mary-Anne
