Wash sweet potatoes and prick with fork.
Place on paper towels.
Microwave at HIGH (100% power) 10 to 13 minutes or until tender, turning halfway through cooking.
In small bowl, combine apples, orange juice, sugar, cornstarch, cinnamon and orange peel.
Cover; cook at HIGH 3 minutes.
Stir mixture and continue cooking, uncovered, at HIGH 1 1/2 to 2 1/2 minutes or until sauce is thickened.
Slit sweet potatoes and spoon sauce over each.
