Sweet Potato Bake
|Pineapple chunks||8 Ounce, packed in juice, undrained (1 Can)|
|Mashed sweet potatoes/Yams||5 Cup (80 tbs)|
|Miniature marshmallows||250 Gram (1 Small Package)|
|Pecan halves||1⁄3 Cup (5.33 tbs)|
Preheat oven to 350° F.
Cut pineapple chunks in half.
In a bowl, stir together pineapple chunks and juice, potatoes, salt, and butter.
Place half of the potato mixture in a buttered casserole.
Top with half the marsh-mallows.
Add remaining potato mixture.
Arrange pecans on top.
Cover and bake for 30 minutes.
Remove cover for last 10 minutes of baking.
Add remaining marshmallows.
This can be made the night before and refrigerated.
Add the nuts and remaining marshmallows just before baking.
