Popular Carrot Cake
|Sugar||1 1⁄4 Cup (20 tbs)|
|Cooking oil||1 Cup (16 tbs)|
|Vanilla extract||1 Teaspoon|
|Unsifted all purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking soda||1 1⁄2 Teaspoon|
|Cinnamon||2 1⁄2 Teaspoon|
|Grated raw carrots||2 1⁄4 Cup (36 tbs)|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
In large mixing bowl blend sugar, oil and vanilla.
Add eggs and beat well.
In small bowl, stir together flour, salt, soda and cinnamon.
Add to sugar-egg mixture and mix in.
Fold in carrots and walnuts.
Pour batter into greased 12x8x2-in dish.
Microwave at High 13 to 15 Minutes, rotating dish 1/2 turn after 8 minutes.
Let stand directly on heat-proof counter or wooden board to cool.
Frost with Cream Cheese Frosting, if desired.
