Fresh Herb Baked Drumsticks
|Chicken drumsticks||8 (Individually Fresh Frozen)|
|Chicken broth||1⁄4 Cup (4 tbs)|
|Wine vinegar||1⁄4 Cup (4 tbs)|
|Corn oil||2 Tablespoon|
|Chopped fresh parsley||2 Tablespoon|
|Chopped fresh chives||2 Tablespoon|
|Chopped fresh thyme||1⁄2 Teaspoon|
|Chopped fresh marjoram||1⁄2 Teaspoon|
|Coarsely ground black pepper||1⁄4 Teaspoon|
|Ground cumin||1⁄4 Teaspoon|
PREP: Preheat oven to 400°F. Line 13x9-inch baking pan with foil; spray with nonstick cooking spray. CLEAN: Wash hands. Remove protective ice glaze from frozen chicken by holding under cool running water 1 to 2 minutes. Arrange chicken in single layer in prepared pan. CLEAN: Wash hands.
COOK: Bake 20 minutes; drain and discard juices. Combine remaining ingredients. Pour mixture over chicken. Bake 20 minutes. Turn chicken over and baste with juices. Bake 15 to 20 minutes or until internal juices of chicken run clear. (Or insert instant-read meat thermometer in thickest part of chicken. Temperature should read 180°F.)
SERVE: Serve with mashed potatoes and green beans, if desired.
CHILL: Refrigerate leftovers immediately.
