Vegetable Jalebi

Ingredients
For dough
  Whole wheat flour 3⁄4 Kilogram
  Fine semolina 1⁄2 Kilogram
  Chilli powder 2 Teaspoon
  Salt To Taste
  Pepper To Taste
For filling
  Green peas 1 Cup (16 tbs), boiled
  Boiled potatoes 4 , peeled and mashed
  Coriander leaves 2 Tablespoon, chopped
  Green chillies 4 , chopped
  Cornflour 2 Tablespoon
  Onions 3 , chopped
  French beans 100 Gram, chopped
  Carrots 2 , chopped
  Cauliflower 1⁄4 Kilogram, chopped
  Sweet potato 1 Large, chopped
  Aubergines 2 , chopped (long)
  Red pumpkin 1⁄4 Kilogram, chopped
  Ginger piece 2 Inch, chopped
  Garlic pod 1 Large, chopped
  Chilli powder 1 Teaspoon
  Garam masala powder 1 Teaspoon
  Dhansakh masala 2 Tablespoon
  Limes 2 , juiced
  Ghee 1⁄4 Kilogram (for shallow frying)
Directions

Make a stiff paste with ingredients for dough, and a little water.
Knead well and beat on the table till pliable.
Keep aside.
Fry paste of spices in a little ghee.
Add fried vegetables and ingredients for filling.
Mix well and mash coarsely.
Season with salt and lime juice.
It should have a sharp taste.
Roll out dough thinly in a rectangular shape, like a Swiss roll.
Spread mixture on it and roll up.
Wet ends so that they stick together firmly.
Cut with a sharp knife into quarter-inch slices.
Shallow fry and serve with wedges of lime.
