Sweet Potatoes With Pineapple In Foil

Ingredients
  Sweet potato 1 Large, peeled and sliced in 1/2 inch thick slices
  Pineapple 4 Tablespoon, chopped
  Margarine 2 Teaspoon
For sauce
  Cornstarch 2 Tablespoon
  Orange juice 1 Cup (16 tbs)
  Margarine 1 Tablespoon
  Orange rind 1 Teaspoon, grated
  Ground ginger 1⁄2 Teaspoon
Directions

Cut out 2 sheets of foil about 12 inches square.
Place half the potato slices on each piece of foil and top with pineapple and margarine.
Fold the foil over the sweet potatoes and seal.
Steam for 20 minutes.
Serve with sauce.
To make sauce, in a pan blend cornstarch with a little orange juice.
Add remaining juice, margarine, grated orange rind and ginger, and thicken over gentle heat.
