Fluffy Sweet Potatoes

Ingredients
  Dried apricots 1 1⁄2 Cup (24 tbs)
  Sweet potatoes 36 Ounce (Vacuum Packed)
  Milk 1⁄2 Cup (8 tbs)
  Eggs 2
  Butter/Margarine 1⁄4 Cup (4 tbs), melted
  Salt 1 1⁄2 Teaspoon
  Lemon peel 1 Teaspoon, grated
Directions

About 1 hour before serving: Cook apricots as label directs; drain.
Preheat oven to 350°F.
In large bowl, with electric mixer at low speed, mash apricots; beat in potatoes, milk, eggs, butter, salt and lemon peel until light and fluffy; pile into greased 1 1/2-quart casserole.
Bake 30 minutes.
Serve hot.
