Sweet Potato Stuffing
|Cooked sweet potatoes||4 Cup (64 tbs), riced or mashed|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Raisin bread crumbs||2 Cup (32 tbs)|
|Crumbled bacon||1⁄2 Cup (8 tbs)|
|Celery||1 Cup (16 tbs), minced|
|Parsley||1 Tablespoon, minced|
|Milk/Cream||1 Cup (16 tbs)|
1. Put the sweet potatoes into a large bowl.
2. Melt the butter or margarine, add it with the salt, crumbs, bacon, celery and parsley to the potatoes. Stir with a large spoon until the ingredients are thoroughly blended. If the stuffing seems too dry, add a few tablespoons of milk or cream.
3. Use in turkey, duck, chicken or crown roasts.
