Sweet Potato Apple Bake
|Sweet potatoes||3 Medium|
|Tart apples||2 , peeled and thinly sliced|
|Maple syrup||1 Tablespoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Snipped parsley||2 Tablespoon|
Select potatoes of same size (7 to 8 ounces each).
Scrub and prick skin.
In microwave oven arrange potatoes on paper toweling leaving at least 1-inch between potatoes.
Micro-cook till done, 10 to 12 minutes; halfway through, rearrange potatoes and turn over.
When cool enough to handle, peel; slice about 1/3 inch thick (3 cups).
In 1 1/2-quart casserole toss potatoes with apples.
In a 1 -cup glass measure micro-melt the butter 30 to 40 seconds; add syrup to make 1/3 cup.
Stir in cinnamon and 1/2 teaspoon salt; pour over potato mixture in casserole.
Stir gently to coat.
Micro-cook, covered, till apples are tender, 5 to 6 minutes; stir gently three times.
Sprinkle with parsley.
