Spicy Fried Peas And Sweet Corn

Ingredients
  Baby potatoes 10 , thickly sliced
  Corn oil 3 Tablespoon
  Onion 1 , diced
  Frozen sweet corn kernel 10 Ounce (300 Grams)
  Frozen peas 8 Ounce (250 Grams)
  Salt 1 Teaspoon
  Chili powder 1 Teaspoon
  Chopped fresh coriander 1 Tablespoon
  Lemon juice 1 Tablespoon
  Red pepper 1 , deseeded and diced
  Tomatoes 2 , sliced
Directions

Blanch the baby potatoes for about 5 minutes in lightly salted boiling water, drain and set aside.
Heat the oil in a karahi or deep frying pan, add the diced onion and stir-fry until golden brown.
Lower the heat and add the sweetcorn, peas, salt and chilli powder and cook for 5-7 minutes, stirring occasionally to prevent it from catching at the bottom.
Mix in the freshly chopped coriander and the lemon juice, then add the potatoes and red pepper and cook for a further 5-7 minutes.
Serve, garnished with the sliced tomatoes.
