Easy Twice Baked Potatoes With Sour Cream

Ingredients
  Potatoes 1 Pound (Use Desired Number)
For each potato:
  Butter 2 Tablespoon
  Sour cream 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Pepper 1 Dash
Directions

Microwave desired number of potatoes.
Slice the top from each potato.
With teaspoon, remove center of potatoes to mixing bowl, leaving shells intact.
Add to mixing bowl butter, sour cream, salt and pepper.
Mix with electric mixer until smooth.
Divide potato mixture evenly among shells, mounding, if necessary.
Sprinkle with chives if desired.
Place potatoes on plate suitable for microwave oven.
Potatoes may be refrigerated at this point if desired.
If potatoes are microwaved immediately, Microwave at High (10) 1 Minute per potato.
If more than 2 potatoes are microwaved at one time, arrange in a circle.
If potatoes are microwaved from refrigerator temperature, increase time for each potato by 1/2 minute.
