Stir Fried Heart With Vegetables

Ingredients
  Heart 4 Ounce (125 Gram Of Pig Lamb Or Ox)
For marinade
  Soy sauce 1 Teaspoon
  Sherry 1⁄2 Teaspoon
  Cornflour 1⁄2 Teaspoon
  Sugar 1⁄4 Teaspoon
  Salt 1 Pinch
  Grated ginger 1 1⁄2 Teaspoon
  Chopped onion 2 Teaspoon
  Garlic 1 Clove (5 gm), chopped
  French beans/Cucumber / celery 5 Ounce (150 Gram)
For seasoning sauce
  Soy sauce 2 Teaspoon
  Sesame oil 1 Teaspoon
  Sugar 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

Cut off the gristle and slice the meat finely.
Marinate for 30 minutes.
Celery or french beans should be washed and cut into 3-cm (1 -in) lengths.
Cucumber should be washed and cut into 3-cm (1 -in) wedges.
Deep-fry the meat for 45 seconds; drain well.
Using celery or french beans: heat a frying-pan with 2 tablespoons of oil and fry the vegetables for about 30 seconds.
Then add 5 tablespoons of water and cook over a high heat for 2 minutes; drain and keep warm.
Re-heat the frying-pan with 1 tablespoon of oil and stir-fry the onion and garlic for 15 seconds.
Add the meat and vegetables and stir-fry for 30 seconds, then add the seasoning sauce, mix well and serve.
Using cucumber: heat a frying-pan with 2 tablespoons of oil and stir-fry the onion and garlic for 15 seconds.
Add the cucumber and stir-fry for 2 minutes, then add the meat and cook for a further 30 seconds.
Mix in the seasoning sauce and serve.
