Vegetable Hotpot With Capers

Ingredients
  Oil 3 Tablespoon
  Onion 1 , chopped
  Garlic 1 Clove (5 gm), crushed
  Cauliflower 1 , cut into florets
  Tomatoes 6 , peeled, chopped
  Green capsicum 1 , seeded and chopped (Or Green Pepper)
  Seasoning To Taste
  Chopped fresh parsley 1 Tablespoon
  Chopped capers 1 Teaspoon
Directions

Heat oil in a large saucepan.
Saute onion and garlic until onion is tender.
Add cauliflower.
Cook, covered, over a gentle heat for 10 minutes.
Stir occasionally.
Stir in tomatoes, capsicum and seasonings.
Simmer for 5 minutes.
