Carrot And Sweet Potato Tzimmes
|Canned beef broth||13 Ounce (1 Can)|
|Sweet potatoes/Yams||2 Large|
|Raisins||1⁄3 Cup (5.33 tbs)|
Pour the broth into a large skillet.
Peel the carrots and sweet potatoes, and cut them into 2-inch chunks.
Add them and the prunes and raisins to the skillet.
Cook over medium-high heat, with the cover ajar, until most of the liquid has evaporated and the vegetables are tender, about 20 minutes.
Watch carefully during the last few minutes! The recipe may be prepared to this point and reheated.
The dish is ready to eat, but to meld the flavors further (as older recipes specify), spoon the mixture into a casserole and bake, covered, in a 350° F. oven for 30 minutes.
