Curried Vegetable Gratin
|Frozen carrots, cauliflower and snow pea pods||16 Ounce|
|All purpose flour||2 Tablespoon|
|Skim milk||1 1⁄3 Cup (21.33 tbs), divided|
|Reduced calorie margarine||1 Tablespoon|
|Shredded reduced fat swiss cheese||2 Ounce|
|Curry powder||1⁄2 Teaspoon|
|Vegetable cooking spray||1|
|Fine dry bread crumbs||2 Tablespoon|
Combine flour and 1/3 cup milk in a saucepan, stirring until smooth.
Add remaining 1 cup milk and margarine; stir well.
Cook over medium heat, stirring constantly, until milk mixture is thickened and bubbly.
Remove from heat; add Swiss cheese, curry powder, and salt, stirring until cheese melts.
Spoon vegetables evenly into 4 (1 1/2-cup) gratin or baking dishes coated with cooking spray.
Spoon cheese mixture over vegetables.
Sprinkle with breadcrumbs.
Broil 5 1/2 inches from heat (with electric oven door partially opened) 4 to 5 minutes or until lightly browned.
