Candied Sweet Potatoes
|Sweet potatoes||4 (raw)|
|Boiling water||1 1⁄4 Cup (20 tbs)|
|Brown sugar||3⁄4 Cup (12 tbs) (firmly packed)|
1. Start oven, set at 400° F., Moderately Hot. Rub a baking dish with butter or margarine.
2. Wash potatoes and boil in 1 cup water with 1/2 teaspoon salt for 25 minutes, or until tender when pierced with a fork. Peel and cut in quarters.
3. Mix the 1/4 cup boiling water and the sugar and bring to boiling point.
4. Place the quartered potatoes in the baking pan, pour the sugar syrup over them, dot with butter. Bake 15 minutes, basting several times with the syrup.
