It'S Not Dessert Scalloped Sweet Potatoes
|9 inch ready prepared low fat graham cracker crust||1|
|Sweet potatoes/Yams||2 Cup (32 tbs), thinly sliced|
|Navel orange||1 , peeled, sliced into thin rounds then cut into small pieces|
|Light brown sugar||1 Tablespoon|
|Fresh orange juice||1⁄3 Cup (5.33 tbs)|
|Pumpkin pie spice||1⁄4 Teaspoon|
|Ground cinnamon||1 Pinch|
|Ground nutmeg||1 Pinch|
|Maple syrup||1 Tablespoon|
|Light butter||1 Tablespoon|
1. Preheat oven to 425°. Cover bottom of pie crust with single overlapping layer of potatoes. Top with layer of orange pieces. Repeat layers, ending with potatoes.
2. In small bowl stir sugar into orange juice. Pour over top of potatoes. Sprinkle with spices. Cover.
3. Bake 1 hour. Uncover. Drizzle maple syrup over top. Dot with butter. Bake 15 minutes more or until top is golden brown and potatoes are tender.
