Sweet Potato Cups
|Sweet potatoes||3 Medium|
|Orange juice||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Cranberry orange relish||6 Tablespoon|
|Pecans||1 Cup (16 tbs), chopped|
|Brown sugar||1⁄4 Cup (4 tbs)|
Cook sweet potatoes in jackets.
MICROWAVE 10 to 12 MINUTES on HIGH or until tender.
Peel potatoes and mash.
Add juice, sugar, salt, nutmeg, cinnamon and vanilla.
Beat with mixer until well blended.
Divide mixture evenly into six "cups" on dinner plate, forming cups with a spoon leaving a well in the center of each.
Fill each well with 1 tablespoon of Cranberry-Orange Relish.
Mix together pecans and brown sugar.
Top each cup with mixture.
MICROWAVE 5 to 8 MINUTES on HIGH or until heated through.
