Sweet Potato Pie
|Unbaked 9 inch pie shell||1|
|Sweet potatoes||2 Pound|
|Honey||1⁄3 Cup (5.33 tbs)|
|Eggs||2 , slightly beaten|
|Milk||1 1⁄2 Cup (24 tbs)|
|Melted butter||3 Tablespoon|
|Grated lemon rind||1 Tablespoon|
|Lemon juice||1 Tablespoon|
Make pie shell according to preferred recipe.
Cook potatoes in water to cover until tender.
Peel and wash; there should be approximately 2 cups.
Preheat oven to 425°F.
Mix together 2 cups potatoes, honey, eggs, milk and butter.
Add spices, salt, lemon rind and lemon juice.
Mix well and pour into unbaked pie shell.
Bake in preheated oven for approximately 1 hour, or until the filling is set and lightly browned on top.
Serve with Whipped cream.
