Vegetable Cottage Cheese Salad

Ingredients
  Red bell pepper 1⁄2 Cup (8 tbs), chopped
  Salt To Taste
  Lettuce leaves 1
  Cucumber 1⁄2 Cup (8 tbs), chopped
  Fresh parsley 1⁄2 Cup (8 tbs), chopped
  Tomato 1⁄2 Cup (8 tbs), chopped (fresh)
  Scallions 2 Large, finley sliced
  Alfalfa sprouts 1⁄2 Cup (8 tbs)
  Sunflower seeds 1⁄3 Cup (5.33 tbs)
  Cottage cheese 3⁄4 Cup (12 tbs)
  Parmesan cheese 2 Tablespoon, grated
Directions

Toss all ingredients except lettuce together in a bowl until well mixed. Serve on a bed of lettuce leaves.
