Okra With Corn And Tomatoes
|Bacon slices||4 , cut into 1/2-inch pieces|
|Frozen whole kernel corn||1 Cup (16 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Red pepper sauce||1⁄4 Teaspoon|
|Tomatoes||2 Medium, cut into eighths|
1. Prepare okra. Place bacon in 2-quart casserole. Cover loosely and microwave on high 4 to 6 minutes or until crisp. Remove bacon with slotted spoon; drain and reserve.
2. Stir okra, corn, onion, salt and pepper sauce into bacon fat in casserole. Cover rightly and microwave on high 12 to 14 minutes, stirring after 5 minutes, until corn is tender.
3. Stir in tomatoes. Cover and microwave 2 to 3 minutes or until hot. Stir in bacon. Sprinkle with freshly cracked pepper if desired.
