Saucy Sweet Potatoes
|Bacon slices||3 , chopped|
|Frozen candied sweet potatoes||20 Ounce, candied (1 Package, Mrs. Paul'S)|
|Canned sliced water chestnuts||8 Ounce, drained (1 Can)|
|Grated orange peel||1⁄2 Teaspoon|
|Orange juice||1⁄2 Cup (8 tbs)|
1. Place bacon in 2-quart microwave-safe casserole. Cover with paper towel; microwave on high 3 minutes or until crisp, stirring once during cooking. Remove bacon to paper towels, reserving drippings in casserole.
2. Stir contents of sauce packet from sweet potatoes into drippings until smooth. Stir in sweet potatoes, water chestnuts, orange peel and juice. Cover with lid; microwave on high 9 minutes or until potatoes are tender, stirring once during cooking. Let stand, covered, 5 minutes. Sprinkle bacon over potatoes.
