Pineapple Nut Sweet Potatoes
|Sweet potatoes||1 1⁄2 Pound (About 4 Medium)|
|Canned crushed pineapple||8 1⁄4 Ounce, drained (1 Can)|
|Coarsely chopped nuts||1⁄4 Cup (4 tbs)|
|Packed brown sugar||1 Tablespoon|
|Miniature marshmallows/11 large marshmallows, cut up||1 Cup (16 tbs)|
|Ground nutmeg||1 Teaspoon|
1. Prepare and microwave sweet potatoes except cool about 30 minutes or until cool enough to handle. Pare and cut into fourths.
2. Layer sweet potatoes, pineapple, nuts, brown sugar and 1/2 cup of the marshmallows in 1 1/2-quart casserole. Cover and microwave on high 7 to 10 minutes or until hot.
3. Sprinkle with remaining marshmallows. Microwave uncovered 1 to 2 minutes or until marshmallows are puffed. Sprinkle with nutmeg.
