Stir Fried Vegetables

  Oil 1 Tablespoon
  Blanched almonds 10
  Fresh ginger root piece 1⁄4 Inch, chopped finely
  Garlic clove 1 Small, chopped finely
  Carrot 1 Small, cut into julienne strips
  Leek 1 Small, sliced
  Red peppers/Yellow pepper 1⁄2 , sliced
  Zucchini 1 , sliced
  Bean sprouts 3 Ounce (75 Gram)
  Tomato paste 1 Teaspoon
  Soy sauce 1 Teaspoon
  Sweet sherry 1 Tablespoon
  Water 2 Tablespoon
  Salt To Taste
  Pepper To Taste

1. Heat the oil in a large pan, add the almonds and cook, stirring, until golden. Remove from the pan and set aside.
2. Add the ginger and garlic to the pan and fry for about 1 minute. Add the carrot, leek and red or yellow pepper and fry for 4 minutes, stirring constantly. Stir in the zucchini and bean sprouts.
3. Mix the tomato paste, soy sauce, sherry and water together, then pour onto the vegetables.
4. Increase the heat and boil hard for 2 minutes. Stir in the almonds, check the seasoning and serve immediately.
