Sweet Potatoes & Spinach

  Sweet potatoes 1 Pound, cut into 1 inch cubes (500 Gram)
  Oil 4 Tablespoon
  Onions 2 , sliced
  Garlic 1 Clove (5 gm), crushed
  Pine nuts 4 Ounce, toasted (125 Gram, 1 Cup)
  Fresh spinach 1 Pound (500 Gram)
  Garam masala 1 Teaspoon
  Chopped dried red chili 2 Teaspoon
  Water 2 Tablespoon
  Freshly grated nutmeg 1 Pinch (For Serving)

1. Boil the sweet potatoes in salted water for 5 minutes until half cooked. Drain and set aside.
2. Heat the oil in a Balti pan or wok, add the onions and stir-fry until golden brown.
3. Add the garlic, sweet potatoes and pine nuts to the pan and stir-fry for 2 minutes until the sweet potatoes have absorbed the oil.
4. Stir in the spinach, garam masala and dried chillies and stir-fry for 2 minutes. Add the water and stir-fry for 4 minutes until the sweet potatoes and spinach are tender.
