Sweet Potatoes & Spinach
|Sweet potatoes||1 Pound, cut into 1 inch cubes (500 Gram)|
|Onions||2 , sliced|
|Garlic||1 Clove (5 gm), crushed|
|Pine nuts||4 Ounce, toasted (125 Gram, 1 Cup)|
|Fresh spinach||1 Pound (500 Gram)|
|Garam masala||1 Teaspoon|
|Chopped dried red chili||2 Teaspoon|
|Freshly grated nutmeg||1 Pinch (For Serving)|
1. Boil the sweet potatoes in salted water for 5 minutes until half cooked. Drain and set aside.
2. Heat the oil in a Balti pan or wok, add the onions and stir-fry until golden brown.
3. Add the garlic, sweet potatoes and pine nuts to the pan and stir-fry for 2 minutes until the sweet potatoes have absorbed the oil.
4. Stir in the spinach, garam masala and dried chillies and stir-fry for 2 minutes. Add the water and stir-fry for 4 minutes until the sweet potatoes and spinach are tender.
