Beef Pot Roast With Whole Vegetables
|Beef for pot roast||4 Pound (Or More)|
|Onion||1 , sliced|
|Water||1 Cup (16 tbs)|
|Mixed vegetables||2 1⁄2 Cup (40 tbs) (Raw Potatoes, Carrots, Whole Green Beans, Small Tomatoes, Whole Onions)|
Brown meat on all sides in hot fat in large heavy kettle.
Remove meat and pour off fat.
Put meat on rack and season with salt and pepper.
Add onion and water.
Cover and simmer 3 hours, or until tender.
Or roast in covered roasting pan in preheated slow oven (325Â°F.) about 3 hours.
Add more water if necessary.
Baste several times with liquid in pan.
