Fresh Vegetable Stir Fry
|Olive oil||1 Tablespoon|
|Yellow onion||1⁄2 , sliced|
|Baby carrots||3 , pared and sliced on the bias|
|Red pepper||1⁄2 , cubed|
|White pepper||1⁄2 , cubed (Holland variety)|
|Sweet banana peppers||1 , cubed|
|Zucchini||1⁄2 , halved lengthwise and sliced on the bias|
|Yellow summer squash||1⁄3 , halved lengthwise and sliced on the bias|
|Pine nuts||2 Tablespoon|
|Chopped fresh ginger||1 Tablespoon|
|Garlic||2 Clove (10 gm), smashed and chopped|
Heat olive oil in frying pan over medium-high heat. Add onion and carrots; cook 2 minutes. Cover and continue cooking 2 minutes.
Add remaining ingredients and mix well. Season with salt and pepper. Cook, uncovered, 5 to 6 minutes over high heat.
If desired, add lemon juice before serving.
