Sweet Potatoes From Thecarolinas

Ingredients
  Olive oil 1 Tablespoon
  Shallots 12 , peeled
  Sweet potatoes 4 , peeled and cubed
  Chopped fresh parsley 1 Tablespoon
Directions

Heat oil in saucepan over medium heat. Add shallots and sweet potatoes; season well. Cover and cook 18 to 30 minutes, stirring 3 to 4 times.
When vegetables are cooked, sprinkle with parsley and serve.
