Ingredients
  Bibb lettuce head 2
  French endives 2
  Watercress 3 Bunch (300 gm)
  Sliced and drained tomatoes 3
  Hardboiled eggs 2 , cut into wedges
  Chopped green onion 1
  Garlic flavored croutons 1 Cup (16 tbs)
  Smoked salmon 1⁄4 Pound, cut in julienne strips
  Cooked and chilled pacific shrimp 1⁄2 Pound
  Red wine tarragon 1⁄2 Cup (8 tbs)
Directions

Wash and dry salad greens and tear into a large bowl.
Add all ingredients except the dressing.
Cover and chill.
At serving time drizzle with dressing and toss lightly.
Serve in individual bowls or on small plates before a main course of meat, game or poultry.
