Leeks In Consomme
|Leeks||3 Bunch (300 gm)|
|Diluted consomme||1 Cup (16 tbs)|
Cut off the roots and green tops to within 1 inch of the white part.
Peel off the outer film.
Hold the green part open under cold running water to wash away any grit.
Bring consommd and small piece of bay leaf to a boil and add the leeks.
Cover, bring again to a boil, then turn heat low and simmer until tender.
Time will depend on the thickness of the bulbs, but count on 15 to 18 minutes.
Drain, saving any liquid for soup, and serve dressed with hot lemon butter.
