Sweet Potato Puff
|Mashed cooked sweet potatoes/Yams||3 Cup (48 tbs), drained (fresh or canned)|
|Brown sugar||1 Tablespoon|
|Eggs||2 , separated|
|Grated orange rind||2 Teaspoon|
|Orange marmalade||1⁄2 Cup (8 tbs)|
Add salt, sugar, nutmeg, slightly beaten egg yolks and orange rind to mashed potatoes.
Fold in the stiffly beaten egg whites.
Pour mixture into a greased 9 x 6-inch casserole.
Set dish in a shallow pan of warm water.
Bake, uncovered, at 350F until mixture is nicely set, about 35 minutes.
Spread marmalade over top and return to oven for another 5 minutes.
