Ingredients
  Eggplant/Null 1 (Null)
  Fennel knob/Null 1 (Null)
  Red pepper/Null 1 (Null)
  Oil/Null 1⁄4 Cup (4 tbs) (Null)
  Salt/Null To Taste (Null)
  Pepper/Null To Taste (Null)
  Chopped fresh basil/1/2 teaspoon dried basil 2 Tablespoon (Null)
Directions

Cut eggplant into 1cm (1/2 in) cubes.
Slice fennel.
Seed red pepper, then cut into 1cm (1/2 in) cubes.
Heat oil in pan, add eggplant, cook until golden brown, stirring constantly.
Add fennel, cook further 3 minutes.
Add red pepper, basil, salt and pepper, mix well.
