Grilled Vegetable Packets
|Baking potato||4 Small, quartered|
|Bell pepper ring||4|
|Plum tomatoes||4 , quartered|
|Thinly sliced carrot||1 Cup (16 tbs)|
|Reduced calorie margarine||4 Tablespoon|
Fold 4 (16 x 12-inch) sheets of heavy-duty aluminum foil in half lengthwise to make a crease.
Open the foil, and layer 4 potato pieces, 1 onion slice, 1 bell pepper ring, 4 tomato pieces, 1/4 cup carrot, and 1 tablespoon margarine on half of each foil sheet; sprinkle each serving with salt and pepper.
Fold foil over vegetables, and tightly seal the edges.
Place vegetable packets on grill rack over medium-hot coals (350° to 400°), and grill 15 minutes; turn packets, and cook an 10 additional minutes or until potato pieces are tender.
