Cinnamon Candied Sweet Potatoes
|Sweet potatoes||12 Small|
|Sugar||2 Cup (32 tbs)|
|Hot water||1 Cup (16 tbs)|
|Ground cinnamon||1 Teaspoon|
|Fresh lemon juice||1 Tablespoon|
|Melted butter||3⁄4 Cup (12 tbs)|
Peel sweet potatoes and leave whole.
Put potatoes in a shallow greased baking dish.
Mix remaining ingredients and cook at a boil for 8 minutes.
Pour hot syrup over potatoes and bake in preheated moderate oven (350°F.) for 1 hour, or until syrup is thick and potatoes are tender.
Spoon syrup in dish over potatoes several times during cooking.
