Grilled Sweet Potatoes And Pineapple

Ingredients
  Margarine/Butter 2 Tablespoon, melted
  Canola oil 2 Tablespoon
  Light brown sugar 2 Tablespoon
  Pecans 3 Tablespoon, minced
  Sweet potatoes 4 Medium, peeled and parboiled
  Pineapple 1 Small, peeled, cored
  Yellow summer squash 1 Medium, cut into 1-inch pieces, blanched
  Orange 1 , sliced
Directions

Thread skewers with sweet potato, squash, pineapple, and orange.
Add any extra vegetable pieces at the end of the skewers.
For brushing sauce, mix together margarine, oil, sugar and pecans.
For topping, mix together pecans, sugar, and zest.
Reserve.
Preheat the grill.
Set skewers on grid over ashen coals.
Grill kabobs for about 9 minutes, rotating and brushing frequently.
When vegetables are browned and tender, place skewers on a platter.
Sprinkle kabobs with topping.
