Pineapple Sweet Potatoes

Ingredients
  Sweet potatoes 4 Medium, unpeeled
  Vegetable oil spray 1
  Unsweetened pineapple juice 1⁄4 Cup (4 tbs)
  Vegetable oil 2 Tablespoon (Acceptable)
  Canned no sugar added crushed pineapple in juice 1 Tablespoon
  Cinnamon 1 Pinch
  Nutmeg 1 Pinch
  Allspice 1 Pinch
  Molasses 1 Tablespoon
  Margarine 1 Teaspoon (Acceptable)
Directions

Boil potatoes until tender (about 30 minutes).
Remove skins and discard.
Preheat oven to 425° F.
Lightly spray a baking dish with vegetable oil.
Mash pulp.
Add fruit juice and oil and whip until fluffy.
Add pineapple and spices.
Turn into prepared baking dish.
Spread molasses over the top, dot with margarine and bake, uncovered, 15 minutes, or until thoroughly heated.
