Wonderfully Flavored Skillet Greens
|Minced garlic||1 Teaspoon|
|Chopped onions||2 Cup (32 tbs)|
|Mustard leaves/Collard||1 1⁄4 Pound, cleaned and picked in all over|
|Smoked greens||1⁄2 Pound, torn in pieces|
|Chicken stock||2 Cup (32 tbs)|
|Peeled chopped tomatoes||2 Cup (32 tbs)|
Melt margarine in 4-quart saucepan over high heat.
Add onions and saute about 4 minutes, stirring occasionally.
Add 1 tablespoon of the Seafood Magic, stirring well.
Cook until onions start to brown, about 3 minutes, stirring occasionally.
Add ham and cook about 2 minutes, stirring fairly often.
Add tomatoes, garlic and bay leaves, stirring well; cook about 1 minute.
Add greens and cook about 7 minutes, stirring occasionally.
Stir in remaining Seafood Magic and cook about 2 minutes.
Add 1/2 cup of the stock; reduce heat to low and simmer about 20 minutes, stirring occasionally.
Add remaining stock and continue simmering until greens are tender and flavors blend, about 25 minutes more, stirring occasionally.
