Tropical Mixed Vegetables
|Green beans||1⁄4 Pound|
|Sliced carrot||1 Cup (16 tbs)|
|Canned low sodium chicken broth||1⁄4 Cup (4 tbs) (Undiluted)|
|Chablis/Dry white wine||2 Tablespoon|
|Curry powder||1⁄4 Teaspoon|
|Ground white pepper||1⁄8 Teaspoon|
|Sweet red pepper||1⁄2 Small, cut into julienne strips|
|Chopped onion||1⁄3 Cup (5.33 tbs)|
|Unsweetened shredded coconut||1 Tablespoon, toasted|
Wash beans; trim ends, and remove strings.
Cut into 1-inch pieces.
Combine beans and next 5 ingredients in a 2-quart casserole.
Cover with heavy-duty plastic wrap, and vent.
Microwave at HIGH 6 minutes.
Add sweet red pepper and onion.
Cover and microwave at HIGH 4 to 5 minutes or until vegetables are crisp-tender.
Sprinkle with coconut.
