Tropical Mixed Vegetables

  Green beans 1⁄4 Pound
  Sliced carrot 1 Cup (16 tbs)
  Canned low sodium chicken broth 1⁄4 Cup (4 tbs) (Undiluted)
  Chablis/Dry white wine 2 Tablespoon
  Curry powder 1⁄4 Teaspoon
  Ground white pepper 1⁄8 Teaspoon
  Sweet red pepper 1⁄2 Small, cut into julienne strips
  Chopped onion 1⁄3 Cup (5.33 tbs)
  Unsweetened shredded coconut 1 Tablespoon, toasted

Wash beans; trim ends, and remove strings.
Cut into 1-inch pieces.
Combine beans and next 5 ingredients in a 2-quart casserole.
Cover with heavy-duty plastic wrap, and vent.
Microwave at HIGH 6 minutes.
Add sweet red pepper and onion.
Cover and microwave at HIGH 4 to 5 minutes or until vegetables are crisp-tender.
Sprinkle with coconut.
