Sweet Potato & Coriander Mash

Ingredients
  Sweet potatoes 1 Kilogram, peeled and chopped
  Butter 60 Gram
  Onion 1 , finely chopped
  Ground coriander 1 Teaspoon
  Black mustard seeds 1 Tablespoon
  Chopped coriander 3 Tablespoon
  Ground black pepper To Taste
  Salt To Taste
Directions

Cook the sweet potatoes in boiling water for 10-12 minutes, or until tender.
Drain well.
Meanwhile, heat the butter in a small pan.
Add the onion and fry gently for 3-4 minutes.
Add the ground coriander and mustard seeds, and continue to fry for a further minute.
Mash the sweet potatoes and combine with the onion mixture and the fresh coriander.
