Sweet Potato Sticks

Ingredients
  Sweet potatoes 2 Pound, peeled
  Vegetable oil 1 Tablespoon
  Grated parmesan cheese 1⁄3 Cup (5.33 tbs)
Directions

Cut potatoes lengthwise into 1/2-inch-thick slices.
Cut slices into 1/4-inch-wide strips.
Place potato strips in a large bowl.
Drizzle oil over potato strips; toss well.
Sprinkle with Parmesan cheese, and toss well.
Arrange potato strips in a single layer on baking sheets coated with cooking spray.
Bake at 400° for 35 to 40 minutes or until potato strips are crisp and lightly browned, stirring every 10 minutes.
