Fried Sweet Potatoes

|Sweet potatoes||2 Large, well scrubbed (Unpeeled)|
|Oil||2 Cup (32 tbs) (For Deep Frying)|
Slice the potatoes into 1/4-inch strips.
Dry thoroughly with paper toweling, squeezing to remove excess moisture.
Fry in hot oil until tender but crisp.
Drain; season with salt and pepper and serve.
