You can use sweet potatoes or yams in this beta-carotene filled breakfast.
Ingredients
  Rolled oats 3⁄4 Cup (12 tbs)
  Fortified non-dairy milk 1⁄2 Cup (8 tbs)
  Cooked sweet potato/Yam 1 Cup (16 tbs)
  Maple syrup 1 Tablespoon
  Cinnamon 1⁄4 Teaspoon
Directions

Combine all of the ingredients in a blender and blend until smooth.
