Sweet Potato and Ham Burgers
|White potatoes||1 Pound, diced (500 Grams)|
|Carrots||7 Ounce, diced (200 Grams)|
|Sweet potato||7 Ounce, diced (200 Grams)|
|Butter/Sunflower margarine||1 Ounce (25 Grams)|
|Garlic||2 Clove (10 gm), finely chopped|
|Egg||1 , beaten|
|Ham||8 Ounce, chopped (250 Grams)|
|Freshly ground black pepper||To Taste|
1. The evening before, place the potatoes and carrots in a steamer and steam for 10 minutes, or until tender. Add the sweet potato after 5 minutes.
2. Meanwhile, melt the butter in a large frying pan over a medium heat and fry the garlic, making sure it doesn't turn brown. Set aside.
3. When the vegetables are cooked through, spoon into a large bowl. Add the garlic and butter, beaten egg, chopped ham and seasoning and mash well. Allow to cool before shaping into 12 burgers.
4. Line a baking sheet with nonstick baking paper and place the burgers on it. Bake in a preheated oven, 180°C (350 F), Gas Mark 4, for 20 minutes until golden and firm.
