Sweet Potato Cakes

Ingredients
  Grated peeled sweet potato 1 Pound (4 Cups)
  All purpose flour 1⁄4 Cup (4 tbs)
  Instant minced onion 1 Teaspoon
  Salt 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  Ground nutmeg 1 Dash
  Egg 1 Large, lightly beaten
  Vegetable cooking spray 1
Directions

Combine first 7 ingredients in a bowl; stir well.
Coat a nonstick griddle or large nonstick skillet with cooking spray.
For each cake, spoon about 1/4 cup potato mixture onto hot griddle or skillet; flatten slightly with a spatula.
Cook 4 minutes on each side or until golden.
