Sweet Potato Poi
|Sweet potatoes||1 Cup (16 tbs)|
|Coconut milk||1⁄2 Cup (8 tbs)|
Boil sweet potatoes in their jackets until tender.
Peel and mash, beating until smooth.
Season to taste with salt and pepper.
Gradually beat in enough coconut milk to make the desired consistency one-finger, two-finger, or three-finger poi.
Keep hot in top part of a double boiler.
