|Sweet potatoes||1 Pound (450 Grams)|
|Honey||37 Milliliter (2 1/2 Tablespoons)|
|Water||1060 Milliliter (4 1/4 Cups)|
|Chinese rock sugar/Brown sugar||75 Milliliter (5 Tablespoons)|
|Vinegar||1 1⁄2 Teaspoon|

2. Add the sweet potato wedges and soak for 15-20 minutes. Remove and drain.
3. Bring 13/4 cups water, sugar, and vinegar to a boil over medium-high heat. Add the sweet potato wedges. Cover and cook over medium heat for 20-25 minutes. Uncover and cook for another 5-10 minutes until the liquid is reduced to about 2/3 cups. Transfer the sweet potatoes to a platter.
