Simple Beefless Hash

Ingredients
  Potatoes 2 Cup (32 tbs)
  Butter/Margarine 2 Tablespoon
  Onion 1 Large, chopped
  Mixed herbs 2 Teaspoon
  Vegetable extract 1 Tablespoon
  Tvp chunks 4 1⁄2 Ounce (1 Packet)
  Vegetable stock/Water 1 1⁄4 Cup (20 tbs)
  Tomato paste 2 Tablespoon
  Freshly ground black pepper To Taste
  Salt To Taste
Directions

Peel and dice the potatoes, and parboil them for 1 minute, then drain.
Melt the butter in a frying pan and saute the onion and garlic.
Then add the herbs.
Add the diced potato and saute for 2-3 minutes.
Now add the vegetable extract and TVP chunks and stir for 2-3 minutes over a low heat.
Stir in the vegetable stock, tomato paste and seasoning.
Cover and simmer over a low heat for 15 minutes, adding a little extra stock or water if necessary to make a thick sauce.
