Ingredients
  Sweet green peppers 1 Pound, cut into strips
  Zucchini 12 Ounce, sliced
  Carrots 8 Ounce, cut into sticks
  Onions 1 1⁄4 Pound, sliced
  Sliced celery 3 2⁄3 Cup (58.67 tbs)
  Banana peppers 4 , cut into strips
  Mushrooms 8 Ounce, sliced
  Cider vinegar 1 Quart
  Water 1 1⁄2 Cup (24 tbs)
  Sugar 1 Cup (16 tbs)
  Mixed pickling spice 2 Tablespoon
  Oregano 1 Teaspoon
  Basil 2 Teaspoon
  Peppercorns 1 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Salt 1 Teaspoon
Directions

Prepare vegetables; set aside.
Combine vinegar, water, sugar and spices in a large sauce pot.
Bring to a boil; reduce heat to a simmer.
Add vegetables and simmer until just tender.
Pack hot vegetables into hot jars, leaving 1/4 inch head space.
Pour hot pickling liquid over vegetables, leaving 1/4 inch head space.
Remove air bubbles.
Adjust caps.
Process 20 minutes in boiling water bath.
