Geranium Leaf Water Ice

Ingredients
  Water 450 Milliliter
  Fine sugar 1⁄2 Cup (8 tbs)
  Lemons 2 (Use Thinly Peeled Rind And Juice)
  Sweet scented geranium leaves 3
  Egg white 1
  Geranium leaves 4 Small (For Garnish)
Directions

1. Place the water, sugar, lemon rind and geranium leaves in a pan and heat gently, stirring until the sugar has dissolved. Bring to the boil, then simmer for 5 minutes. Add the lemon juice, cover and leave to cool.
2. Strain into a rigid freezerproof container, cover, seal and freeze for about 3 hours, until half-frozen. Turn into a bowl.
3. Whisk the egg white until stiff, then whisk into the half-frozen ice. Return to the container, cover, seal and freeze for about 2 hours, until firm.
